Description

  • 1/2 cup salsa, store-bought or homemade
  • 1/3 cup sour cream
  • salt and pepper to taste
  • 12 (6-inch) corn tortillas (or flour tortillas)
  • Toppings:

  • shredded lettuce
  • chopped tomatoes
  • sour cream
  • Pico de Gallo

Instructions

  1. Prepare the Filling: In a bowl, mix shredded chicken, cream cheese, spinach, Colby Jack cheese, salsa, sour cream, salt, and pepper until well combined.
  2. Assemble Taquitos: Place a spoonful of the filling onto each tortilla, roll up tightly, and secure with toothpicks.
  3. Fry the Taquitos: Heat oil in a skillet and fry the taquitos until golden brown and crispy.
  4. Serve: Remove toothpicks, top with shredded lettuce, tomatoes, sour cream, and Pico de Gallo before serving.
