They combine fluffy pancake batter with savory breakfast sausage, cheddar cheese, and a hint of maple syrup for a portable and delicious meal. - 2 cups pancake mix (e.g., Bisquick or similar)
- 1 1/2 cups water
- 1 lb breakfast sausage (cooked and crumbled)
- 1 cup shredded cheddar cheese
- 1/4 cup pure maple syrup
Instructions
- Preheat the oven to 400°F (200°C). Grease or line a mini muffin tin.
- In a skillet over medium-high heat, cook and crumble the breakfast sausage. Drain excess grease and set aside.
- In a mixing bowl, combine pancake mix and water until smooth. Fold in the cooked sausage, shredded cheese, and maple syrup.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 12–15 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.
- Let the bites cool for a few minutes before removing them from the tin. Serve with extra maple syrup if desired.
Notes
- Swap cheddar for your favorite cheese or use maple-flavored sausage for extra sweetness.
- Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the microwave, oven, or air fryer.
