Description

Mini McGriddle Bites are the perfect blend of sweet and savory in a bite-sized breakfast treat. They combine fluffy pancake batter with savory breakfast sausage, cheddar cheese, and a hint of maple syrup for a portable and delicious meal. These are ideal for busy mornings, brunches, or meal prepping.


Ingredients

  • 2 cups pancake mix (e.g., Bisquick or similar)
  • 1 1/2 cups water
  • 1 lb breakfast sausage (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C). Grease or line a mini muffin tin.
  2. In a skillet over medium-high heat, cook and crumble the breakfast sausage. Drain excess grease and set aside.
  3. In a mixing bowl, combine pancake mix and water until smooth. Fold in the cooked sausage, shredded cheese, and maple syrup.
  4. Fill each muffin cup about ¾ full with the batter.
  5. Bake for 12–15 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.
  6. Let the bites cool for a few minutes before removing them from the tin. Serve with extra maple syrup if desired.
