Ingredients

Units Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sun-dried tomatoes, chopped
  • 8 ounces fettuccine or your favorite pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by seasoning the chicken breasts with salt, pepper, garlic powder, onion powder, oregano, thyme, and red pepper flakes.
  2. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the chicken broth, scraping up any browned bits. Stir in the heavy cream, Parmesan, and Dijon mustard, and cook for 3-4 minutes until the sauce thickens.
  4. Stir in the chopped sun-dried tomatoes and simmer for another 2 minutes.
  5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  6. Slice the cooked chicken into strips and return it to the skillet. Add the pasta and toss everything together to coat with the sauce.
  7. Serve immediately, garnished with fresh parsley.

Notes

  • For a lighter version, swap heavy cream with half-and-half or a milk alternative.
  • Add some spinach or mushrooms for extra veggies.
  • Use any pasta you like, such as penne or spaghetti.
