For Basic Italian Cream Soda:
- 3 tablespoons homemade fruit syrup
- 1 cup club soda or sparkling water
- 2 tablespoons half & half or heavy cream
- Ice cubes
- Optional: Whipped cream topping

Homemade Fruit Syrups (choose one): Raspberry Syrup:
- 2 cups fresh raspberries
- 1 cup sugar
- 1 cup water
Strawberry Syrup:
- 2 cups fresh strawberries, hulled
- 1 cup sugar
- 1 cup water
Peach Syrup:
- 2 cups ripe peaches, pitted
- 1 cup sugar
- 1 cup water
Instructions
For Fruit Syrups:
- Combine fruit, sugar, and water in a saucepan
- Bring to boil, reduce heat, simmer 15 minutes
- Mash fruit gently while cooking
- Strain through fine-mesh sieve
- Cool completely before using
- Store in airtight container
For Cream Soda Assembly:
- Fill tall glass with ice cubes
- Pour fruit syrup over ice
- Slowly add club soda while stirring gently
- Float cream on top by pouring over back of spoon
- Optional: Top with whipped cream
- Garnish with fresh fruit and mint
