Ingredients

For Basic Italian Cream Soda:

  • 3 tablespoons homemade fruit syrup
  • 1 cup club soda or sparkling water
  • 2 tablespoons half & half or heavy cream
  • Ice cubes
  • Optional: Whipped cream topping
  • Garnish: Fresh fruit and mint leaves

Homemade Fruit Syrups (choose one): Raspberry Syrup:

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 1 cup water

Strawberry Syrup:

  • 2 cups fresh strawberries, hulled
  • 1 cup sugar
  • 1 cup water

Peach Syrup:

 

  • 2 cups ripe peaches, pitted
  • 1 cup sugar
  • 1 cup water

Instructions

For Fruit Syrups:

  1. Combine fruit, sugar, and water in a saucepan
  2. Bring to boil, reduce heat, simmer 15 minutes
  3. Mash fruit gently while cooking
  4. Strain through fine-mesh sieve
  5. Cool completely before using
  6. Store in airtight container

For Cream Soda Assembly:

 

  1. Fill tall glass with ice cubes
  2. Pour fruit syrup over ice
  3. Slowly add club soda while stirring gently
  4. Float cream on top by pouring over back of spoon
  5. Optional: Top with whipped cream
  6. Garnish with fresh fruit and mint
