For the Potatoes:
- 2 lbs Yukon Gold or Russet potatoes, peeled and diced
- 1 tsp salt (for boiling)
For the Sauce:
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 1 1/2 cups whole milk, warmed
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp nutmeg (optional)
- Salt and pepper to taste
For the Topping:
- 1/2 cup breadcrumbs
- 2 tbsp unsalted butter, melted
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare the Potatoes:
- Preheat the oven to 375°F (190°C).
- Bring a large pot of water to a boil, adding 1 teaspoon of salt. Add the diced potatoes and cook for 10–12 minutes until tender but not falling apart. Drain and set aside.
- Make the Cheese Sauce:
- In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1–2 minutes until lightly golden.
- Gradually whisk in the warmed milk and heavy cream, cooking until the mixture thickens.
- Stir in cheddar cheese, Parmesan cheese, garlic powder, onion powder, nutmeg, salt, and pepper. Cook until the cheese is fully melted and smooth.
- Assemble the Casserole:
- In a greased 9×13-inch baking dish, combine the cooked potatoes with the cheese sauce, tossing gently to coat evenly.
- Prepare the Topping:
- In a small bowl, mix breadcrumbs, melted butter, and Parmesan cheese. Sprinkle the mixture evenly over the potatoes.
- Bake:
- Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and bubbling.
- Serve:
- Allow the casserole to cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- For extra flavor, add diced cooked bacon or caramelized onions to the potato mixture.
- Leftovers can be reheated in the oven at 350°F (175°C) for 15–20 minutes.
