Description

Beef Lombardi is a hearty and flavorful casserole dish made with seasoned ground beef, tomatoes, and creamy cheeses, all layered with egg noodles for a satisfying meal.

  • 1 lb lean ground beef
  • 1/2 onion, chopped

  • 4 tablespoons (3 oz) tomato paste
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 3 (10 oz) cans diced tomatoes & chilies, drained
  • 1/4 teaspoon celery salt
  • 1 (12 oz) package egg noodles
  • 1 1/4 cups sour cream
  • 4 oz cream cheese, softened
  • 1 tablespoon cornstarch
  • 2 1/2 cups Colby Jack cheese

Instructions

  1. Brown Ground Beef: In a large skillet, heat olive oil over medium heat. Add ground beef, onion, salt, and pepper. Cook until beef is browned and onions are tender.
  2. Add Flavors: Stir in tomato paste, garlic, Italian seasoning, diced tomatoes & chilies, and celery salt. Simmer for 10 minutes.
  3. Cook Noodles: Cook egg noodles according to package instructions. Drain and set aside.
  4. Prepare Cheese Mixture: In a separate bowl, mix sour cream, cream cheese, and cornstarch until smooth.
  5. Layer Casserole: In a baking dish, layer half of the noodles, beef mixture, and cheese mixture. Repeat layers. Top with Colby Jack cheese.
  6. Bake: Cover with foil and bake at 350°F for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and cheese is melted.
