Main Ingredients:
- 1 tablespoon olive oil
- 1 lb lean ground beef
- 1/2 onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons (3 oz) tomato paste
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 3 (10 oz) cans diced tomatoes & chilies, drained
- 1/4 teaspoon celery salt
- 1 (12 oz) package egg noodles
- 1 1/4 cups sour cream
- 4 oz cream cheese, softened
- 1 tablespoon cornstarch
- 2 1/2 cups Colby Jack cheese
Instructions
- Brown Ground Beef: In a large skillet, heat olive oil over medium heat. Add ground beef, onion, salt, and pepper. Cook until beef is browned and onions are tender.
- Add Flavors: Stir in tomato paste, garlic, Italian seasoning, diced tomatoes & chilies, and celery salt. Simmer for 10 minutes.
- Cook Noodles: Cook egg noodles according to package instructions. Drain and set aside.
- Prepare Cheese Mixture: In a separate bowl, mix sour cream, cream cheese, and cornstarch until smooth.
- Layer Casserole: In a baking dish, layer half of the noodles, beef mixture, and cheese mixture. Repeat layers. Top with Colby Jack cheese.
- Bake: Cover with foil and bake at 350°F for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and cheese is melted.
