For the Chicken and Sauce:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine (optional)
  • 1 (1 oz) packet Italian dressing seasoning mix
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For Serving:

  • 4 cups cooked white rice or brown rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Chicken:
    Season the chicken breasts with salt and pepper.
  2. Sear the Chicken:
    In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 3–4 minutes on each side until golden brown. Remove and set aside.
  3. Make the Sauce:
    In the same skillet, add the garlic and sauté for 30 seconds. Lower the heat and stir in the cream of mushroom soup, cream of chicken soup, softened cream cheese, chicken broth, white wine (if using), and Italian dressing mix. Whisk until smooth.
  4. Combine Chicken and Sauce:
    Return the chicken to the skillet, spooning some sauce over the top. Cover and simmer on low heat for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  5. Serve:
    Serve the chicken and sauce over a bed of warm rice. Garnish with chopped parsley for a pop of color and freshness.

Notes

  • For a non-alcoholic version, replace white wine with extra chicken broth.
  • This dish can also be served with pasta, mashed potatoes, or crusty bread.
  • To make it lighter, use low-fat cream cheese and reduced-sodium soups.
