Description

This creamy, hearty Zuppa Toscana is a Tuscan-inspired soup made with Italian sausage, potatoes, kale, and garlic, all simmered in a rich, flavorful broth. It’s a cozy, satisfying meal perfect for chilly nights or when you need a comforting bowl of goodness.


Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 4 slices bacon, chopped (optional, for extra smokiness)
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, diced (Russet or Yukon Gold)
  • 2 cups kale, chopped (or substitute with spinach)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • Salt and black pepper, to taste

Instructions

  1. Brown the Sausage

    • In a large pot over medium heat, cook Italian sausage, breaking it into crumbles.

    • Once browned, remove and set aside.

  2. Sauté the Aromatics

    • In the same pot, cook bacon (if using) until crispy, then remove and drain excess grease.

    • Add onion and garlic, sautéing until soft and fragrant (about 2 minutes).

  3. Simmer the Soup

    • Pour in chicken broth and add diced potatoes.

    • Bring to a gentle boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.

  4. Add the Kale and Cream

    • Stir in kale and let it wilt for 2-3 minutes.

    • Lower the heat and pour in heavy cream, stirring to combine.

  5. Finish and Serve

    • Return the cooked sausage (and bacon, if used) to the pot.

    • Simmer for 5 more minutes, then season with salt and black pepper to taste.

    • Serve hot with crusty bread or a sprinkle of Parmesan cheese.
