Ingredients
- 1 lb Italian sausage (mild or hot)

- 4 cups chicken broth
- 4 medium potatoes, diced (Russet or Yukon Gold)
- 2 cups kale, chopped (or substitute with spinach)

In a large pot over medium heat, cook Italian sausage, breaking it into crumbles.
