Description

This Yaki Udon is a quick and easy stir-fried noodle dish packed with savory, umami flavors. Thick and chewy udon noodles are tossed in a flavorful sauce with tender vegetables and your choice of protein. Perfect for a fast weeknight dinner, this dish comes together in under 30 minutes and tastes better than takeout!

For the Noodles:

  • 12 oz fresh or frozen udon noodles
  • 1 tablespoon oil (vegetable or sesame oil)

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 1 tablespoon mirin
  • 1/2 teaspoon sugar (optional, for balance)

For the Stir-Fry:

  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup cabbage, shredded
  • 1/2 cup carrots, julienned
  • 2 scallions, sliced
  • Protein of choice:

  • 6 oz chicken, beef, shrimp, tofu, or mushrooms (sliced or cubed)

For Garnish:

  • 1 teaspoon sesame oil (for finishing)
  • Sesame seeds
  • Extra scallions

Instructions

1. Cook the Udon Noodles

  • Cook udon noodles according to package instructions.

  • Drain and rinse under cold water to prevent sticking.

2. Sauté the Aromatics

  • Heat oil in a large pan or wok over medium-high heat.

  • Add garlic and ginger, cooking until fragrant (about 30 seconds).

3. Cook the Protein

  • Add chicken, beef, shrimp, tofu, or mushrooms.

  • Stir-fry until fully cooked (about 3-5 minutes depending on protein).

4. Stir-Fry the Vegetables

  • Toss in cabbage and carrots, cooking until slightly softened (about 2 minutes).

5. Add the Noodles & Sauce

  • Add the cooked udon noodles to the pan.

  • Pour in soy sauce, oyster sauce, and mirin.

  • Toss everything together until evenly coated and heated through.

6. Finish & Serve

  • Drizzle with sesame oil, toss once more.

  • Garnish with scallions and sesame seeds.

  • Serve immediately and enjoy!
