Units Scale
  • For the Wontons:
    • 12-15 wonton wrappers
    • 1/2 lb ground pork or shrimp (or a mix)
    • 2 green onions, finely chopped
    • 1 teaspoon soy sauce
    • 1/2 teaspoon sesame oil
    • 1/2 teaspoon grated ginger
    • 1 garlic clove, minced
    • 1 pinch white pepper
  • For the Broth:
    • 6 cups chicken stock
    • 2 cups water
    • 2 tablespoons soy sauce
    • 1 teaspoon sesame oil
    • 1-inch piece ginger, sliced
    • 2 garlic cloves, smashed
    • 23 bok choy, halved lengthwise
  • For the Noodles:
    • 12 oz fresh egg noodles
  • Toppings:
    • Green onions, sliced
    • Fresh cilantro (optional)
    • Chili oil or sauce (optional)

Instructions

  1. Prepare the Wontons:
    1. In a mixing bowl, combine ground pork or shrimp, green onions, soy sauce, sesame oil, ginger, garlic, and white pepper. Mix well.
    2. Place 1 teaspoon of filling in the center of a wonton wrapper. Moisten the edges with water, fold into a triangle, and press to seal. Bring the two corners together and pinch to form the classic wonton shape. Repeat for all wrappers.
  2. Cook the Wontons:
    1. Bring a pot of water to a boil. Gently drop in the wontons and cook for 3-4 minutes until they float. Remove with a slotted spoon and set aside.
  3. Make the Broth:
    1. In a large pot, combine chicken stock, water, soy sauce, sesame oil, ginger, and garlic. Bring to a boil, then reduce heat to a simmer. Add bok choy and cook for 3-5 minutes until tender.
  4. Prepare the Noodles:
    1. Cook the egg noodles according to package instructions. Drain and set aside.
  5. Assemble the Soup:
    1. Divide the cooked noodles into serving bowls. Add the wontons, pour over the hot broth, and include bok choy in each bowl.
  6. Add Toppings and Serve:
    1. Garnish with green onions, cilantro, and a drizzle of chili oil if desired. Serve hot and enjoy!

Notes

  • Wonton filling can be prepared ahead of time and stored in the refrigerator for up to 24 hours.
  • For a vegetarian version, use vegetable stock and replace wonton filling with finely chopped mushrooms or tofu.
  • Adjust seasoning to taste by adding more soy sauce or chili oil.
