Description

White Lasagna Soup is a creamy and comforting twist on traditional lasagna, perfect for cozy nights in. This soup combines all the flavors of lasagna in a bowl, with tender chicken, lasagna noodles, and a creamy ricotta mixture.

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 2 cups baby spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Garnish:

  • Grated Parmesan cheese

Instructions

  1. Saute Aromatics: In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until softened.
  2. Add Broth & Protein: Pour in chicken broth and add shredded chicken. Bring to a simmer.
  3. Cook Noodles: Add broken lasagna noodles, cooking until al dente.

  5. Finish Soup: Add baby spinach, oregano, basil, salt, and pepper. Simmer until spinach wilts.
