Description

A creamy, flavorful twist on traditional chili, White Chicken Chili combines tender chicken, white beans, green chilies, and a creamy base to create the ultimate comfort food. It’s quick to make, hearty, and perfect for weeknight dinners or family gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) green chilies
  • 4 cups chicken broth
  • 1 cup frozen corn (optional)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté diced onion and minced garlic over medium heat until softened and fragrant.
  2. Add the green chilies, cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine.
  3. Pour in the chicken broth, and bring the mixture to a simmer.
  4. Add the shredded chicken, white beans, and frozen corn (if using). Simmer for 15-20 minutes, allowing the flavors to meld.
  5. Stir in the cream cheese until fully melted and incorporated. Then, add the heavy cream and stir until smooth.
  6. Serve hot, garnished with shredded cheese, chopped cilantro, and a squeeze of lime juice if desired.

Notes

  • For a thicker chili, mash a portion of the beans before adding them to the pot.
  • Adjust the spice level by adding diced jalapeños or a pinch of cayenne.
