Description

This Walking Taco Casserole combines all the flavors of your favorite walking tacos into a hearty, cheesy casserole. Layers of seasoned ground beef, tortilla chips, beans, cheese, and sour cream create a deliciously easy dinner the whole family will love. Serve it with extra toppings for a customizable meal!

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (optional)
  • Optional toppings: diced tomatoes, sliced jalapeños, chopped cilantro, extra sour cream

Instructions

  1. Prepare the Meat Mixture:
    1. In a skillet over medium heat, brown the ground beef. Once cooked, drain any excess fat.
    2. Add chopped onion and garlic to the skillet, cooking until softened, about 2-3 minutes. Stir in taco seasoning, diced tomatoes with green chilies, and black beans. Let simmer for 5-7 minutes.
  2. Assemble the Casserole:
    1. Preheat the oven to 375°F (190°C).
    2. In a greased 9×13-inch casserole dish, spread a layer of crushed tortilla chips on the bottom.
    3. Pour the beef and bean mixture over the chips, spreading evenly.
    4. Top with shredded cheddar and mozzarella cheese.
  3. Bake the Casserole:
    1. Cover the casserole with aluminum foil and bake for 20-25 minutes, until the cheese is melted and bubbly.
    2. Remove the foil and bake for an additional 5 minutes to lightly brown the cheese.
  4. Serve:
    1. Allow the casserole to cool slightly before serving.
    2. Top with sour cream and green onions. Add any additional toppings like diced tomatoes, jalapeños, or cilantro. Serve warm.
