Cottage Cheese:

  • 1 cup cottage cheese
  • A handful of cilantro leaves, chopped
  • 2 teaspoons ranch seasoning

Taco Beef:

  • 1 tablespoon olive oil
  • 3 garlic cloves, crushed
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1lb/500g ground beef
  • 2 tablespoons tomato paste
  • 1 can black beans (400g/15oz can), drained
  • A handful of spinach leaves

To Garnish:

  • Hot honey sauce
  • Pickled jalapenos
  • A handful of cilantro leaves

Instructions

  1. Prepare the sweet potatoes: Cut sweet potatoes into cubes, toss with olive oil, paprika, and salt, then roast until tender.
  2. Make the whipped avocado: Blend avocado, lime juice, cilantro, salt, and pepper until smooth.
  3. Prepare the cottage cheese: Mix cottage cheese with cilantro and ranch seasoning.
  4. Cook the taco beef: Sauté garlic and spices, add beef and cook until browned, then stir in beans and tomato paste.
  5. Assemble the bowls: Divide sweet potatoes, whipped avocado, cottage cheese, taco beef mixture, and spinach among bowls. Garnish with hot honey, jalapenos, and cilantro.
