- 1 1/2 cups dried cranberries
- 12 oz white chocolate chips (or chopped white chocolate)
- 2 teaspoons coconut oil (optional, for smooth melting)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt (optional, to enhance flavor)
- Red and pink sprinkles (optional, for decoration)
Instructions
- Melt the white chocolate: In a heatproof bowl, melt the white chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between until smooth.
- Add flavoring: Stir in vanilla extract and a pinch of sea salt if desired.
- Coat the cranberries: Add the dried cranberries to the melted chocolate and gently stir to coat each piece.
- Form heart shapes: Using a silicone heart-shaped mold, spoon a small amount of the chocolate-coated cranberries into each heart, making sure they are evenly distributed.
- Chill: Place the molds in the refrigerator for at least 30 minutes or until the chocolate has fully set.
- Serve: Once set, gently remove the heart-shaped bites from the mold. Decorate with red and pink sprinkles if desired. Serve immediately or store in an airtight container in the refrigerator.
Notes
- If you don’t have a heart-shaped mold, you can also drop spoonfuls of the chocolate-coated cranberries onto parchment paper to set into bite-sized clusters.
- For extra flavor, you can sprinkle a little orange zest or cinnamon on top before chilling the bites.
- These bites can be made up to a week in advance and stored in the fridge.
