Description

Indulge in the rich flavors of Tuscan Butter Mushrooms with bacon, butter, white wine, and cream, all cooked to perfection with a touch of Italian seasoning and Parmesan cheese.

Main Ingredients:

  • 4 slices thick sliced bacon, reserve drippings
  • 1 lb baby Bella mushrooms, washed and dried
  • 4 Tbsp real butter
  • 1 teaspoon minced garlic
  • 1 med. onion, diced
  • 1 C white wine (substitute with chicken broth, if desired)
  • 1 C cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 pinch red pepper flakes
  • 1 C heavy cream
  • 1/2 C shaved Parmesan
  • 3 C spinach

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then crumble and set aside.
  2. Sauté Ingredients: In the same skillet, sauté mushrooms, butter, garlic, and onion until tender.
  3. Add Liquids: Pour in white wine, cherry tomatoes, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for a few minutes.
  4. Finish Dish: Stir in heavy cream, Parmesan, spinach, and cooked bacon. Cook until spinach wilts.
  5. Serve: Serve hot and enjoy!

Notes

  • You can adjust the spice level by adding more or less red pepper flakes.
  • For a lighter version, you can use half-and-half instead of heavy cream.
  • Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
