Description

Indulge in the rich flavors of tiramisu with these decadent Tiramisu Blondies. A perfect combination of espresso-infused blondies topped with a creamy tiramisu frosting.

For the blondies:

  • 1/2 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 large egg + 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon espresso powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

For the espresso soak:

  • 1/4 cup warm water
  • 1 tablespoon espresso powder
  • 1 teaspoon cocoa powder

For the tiramisu cream:

  • 1 cup heavy whipping cream
  • 8 ounce mascarpone, cold from the fridge
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • cocoa powder, for dusting

Instructions

  1. Prepare the blondies: Mix melted butter, brown sugar, eggs, and vanilla. Add flour, espresso powder, salt, and baking powder. Bake until set.
  2. Make the espresso soak: Dissolve espresso powder and cocoa in warm water. Set aside to cool.
  3. Whip the tiramisu cream: Beat heavy cream until stiff peaks form. In a separate bowl, mix mascarpone, powdered sugar, vanilla, and salt. Fold in whipped cream.
  4. Assemble: Cut blondies into squares, soak with espresso mixture, and top with tiramisu cream. Dust with cocoa powder.

Notes

  • For a stronger coffee flavor, increase the amount of espresso powder in the blondies.
  • Chill the assembled blondies in the fridge for a few hours before serving for best results.
