For the blondies:
- 1/2 cup unsalted butter, melted
- 1 cup packed light brown sugar
- 1 large egg + 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon espresso powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
For the espresso soak:
- 1/4 cup warm water
- 1 tablespoon espresso powder
- 1 teaspoon cocoa powder
For the tiramisu cream:
- 1 cup heavy whipping cream
- 8 ounce mascarpone, cold from the fridge
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- pinch of salt
- cocoa powder, for dusting
Instructions
- Prepare the blondies: Mix melted butter, brown sugar, eggs, and vanilla. Add flour, espresso powder, salt, and baking powder. Bake until set.
- Make the espresso soak: Dissolve espresso powder and cocoa in warm water. Set aside to cool.
- Whip the tiramisu cream: Beat heavy cream until stiff peaks form. In a separate bowl, mix mascarpone, powdered sugar, vanilla, and salt. Fold in whipped cream.
- Assemble: Cut blondies into squares, soak with espresso mixture, and top with tiramisu cream. Dust with cocoa powder.
Notes
- For a stronger coffee flavor, increase the amount of espresso powder in the blondies.
- Chill the assembled blondies in the fridge for a few hours before serving for best results.
