Ingredients
– 3/4 cup Flour
– 2 eggs
– 1 1/4 cup Italian Panko Bread Crumbs
– 3/4 cup shredded Parmesan Cheese
– 2 1/2 tbsp chopped Parsley, divided
– 2-4 tbsp Oil
– 3 boneless skinless Chicken Breast halves
– 24 oz Marinara Sauce
Instructions
1. Preheat the oven to 400°F.
2. In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, and 1 1/2 tbsp parsley.
3. Dredge each chicken breast in flour, dip in egg, then coat with breadcrumb mixture.
4. Heat oil in a large skillet and cook chicken until golden brown on both sides.
5. Place chicken in a baking dish, top each breast with marinara sauce, mozzarella, and remaining parsley. Bake for 20 minutes or until cheese is melted and bubbly.
Notes
– For a healthier version, you can bake the breaded chicken instead of frying it.
– Feel free to add a sprinkle of red pepper flakes for a spicy kick.
