Cornbread Crust:
- 2 (8.5 ounce) boxes dry corn bread mix
- 2 large eggs
- 2/3 cup whole milk
- 4 ounces shredded Sharp Cheddar cheese
- 4 ounces shredded Monterey Jack cheese
Seasonings:
- 1 teaspoon salt
- 1/2 teaspoon dried oregano
- 1 teaspoon ground dried chipotle pepper
- 1 tablespoon brown sugar
Instructions
- Preheat Oven: Preheat the oven to 375°F and grease a 9×13 casserole dish with cooking spray.
- Cook Beef: In a skillet, cook the ground beef until browned. Add poblano peppers, corn, salsa, enchilada sauce, salt, oregano, chipotle pepper, and brown sugar. Simmer for 10 minutes.
- Prepare Cornbread Mix: In a bowl, mix cornbread mix, eggs, milk, Cheddar cheese, and Monterey Jack cheese until combined.
- Assemble: Pour the beef mixture into the casserole dish. Spoon the cornbread mixture on top.
- Bake: Bake for 25-30 minutes or until the cornbread is golden brown.
