Description

Cornbread Crust:

  • 2 (8.5 ounce) boxes dry corn bread mix
  • 2 large eggs
  • 2/3 cup whole milk
  • 4 ounces shredded Sharp Cheddar cheese
  • 4 ounces shredded Monterey Jack cheese

Seasonings:

  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1 teaspoon ground dried chipotle pepper
  • 1 tablespoon brown sugar

Instructions

  1. Preheat Oven: Preheat the oven to 375°F and grease a 9×13 casserole dish with cooking spray.
  2. Cook Beef: In a skillet, cook the ground beef until browned. Add poblano peppers, corn, salsa, enchilada sauce, salt, oregano, chipotle pepper, and brown sugar. Simmer for 10 minutes.
  3. Prepare Cornbread Mix: In a bowl, mix cornbread mix, eggs, milk, Cheddar cheese, and Monterey Jack cheese until combined.
  4. Assemble: Pour the beef mixture into the casserole dish. Spoon the cornbread mixture on top.
  5. Bake: Bake for 25-30 minutes or until the cornbread is golden brown.
