Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil or butter
  • 1 cup sliced mushrooms
  • 1 small onion, thinly sliced
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 1 cup prepared chicken gravy (store-bought or homemade)

Instructions

  1. Marinate the Chicken:
    1. Place the chicken breasts in a resealable plastic bag.
    2. Pour the Italian dressing over the chicken, seal the bag, and refrigerate for at least 30 minutes, preferably up to 2 hours.
  2. Prepare the Vegetables:
    1. In a large skillet over medium heat, add 1 tablespoon of olive oil.
    2. Sauté the sliced onions until they become translucent, about 5 minutes.
    3. Add the sliced mushrooms and minced garlic to the skillet.
    4. Continue cooking until the mushrooms are tender and any liquid has evaporated, approximately 5-7 minutes.
    5. Season the mixture with a pinch of salt and pepper.
    6. Remove the vegetables from the skillet and set aside.
  3. Cook the Chicken:
    1. Remove the chicken breasts from the marinade and pat them dry with paper towels.
    2. In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder.
    3. Sprinkle this seasoning mixture evenly over both sides of the chicken breasts.
    4. In the same skillet, add the remaining 1 tablespoon of olive oil over medium-high heat.
    5. Cook the chicken breasts for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (74°C).
  4. Assemble the Dish:
    1. Preheat your oven to 350°F (175°C).
    2. Place the cooked chicken breasts on a baking sheet or oven-safe dish.
    3. Evenly distribute the sautéed onions and mushrooms over each chicken breast.
    4. Sprinkle the shredded Monterey Jack cheese on top of the vegetables.
  5. Bake:
    1. Place the dish in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    1. Remove from the oven and let rest for a couple of minutes.
    2. Garnish with chopped fresh parsley before serving.

Notes

  • For added flavor, consider adding a splash of Worcestershire sauce to the mushroom and onion mixture during sautéing.
  • This dish pairs well with mashed potatoes or steamed vegetables for a complete meal.
