Description

This Tater Tot Sausage Christmas Breakfast Casserole is a hearty, comforting dish perfect for holiday mornings or any special breakfast gathering. Featuring a savory combination of ground breakfast sausage, diced onion, red bell pepper, and fluffy eggs, all layered with crispy tater tots and melted Colby Jack cheese, this casserole is easy to prepare and sure to satisfy a crowd.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground breakfast sausage
  • 1 medium onion, diced
  • 1 red bell pepper, diced

Egg Mixture

  • 8 eggs
  • 2 cups milk
  • 1 tsp garlic powder
  • ½ tsp pepper

Dairy and Toppings

  • 1½ cups Colby Jack cheese, divided
  • 28 oz frozen tater tots

Instructions

  1. Cook the Sausage and Vegetables: In a large skillet over medium heat, cook the ground breakfast sausage until browned and cooked through. Add the diced onion and red bell pepper, cooking until the vegetables are softened, about 5-7 minutes. Drain excess fat if necessary.
  2. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, and pepper until fully combined and slightly frothy.
  3. Layer the Casserole: Preheat your oven to 350°F (175°C). In a greased 9×13 inch baking dish, spread the cooked sausage and vegetable mixture evenly across the bottom. Sprinkle half of the Colby Jack cheese over the sausage layer. Arrange the frozen tater tots in a single layer on top of the cheese.
  4. Pour Egg Mixture and Add Cheese: Carefully pour the egg mixture over the tater tots, making sure it covers them evenly. Sprinkle the remaining Colby Jack cheese evenly over the top of the casserole.
  5. Bake the Casserole: Place the casserole in the preheated oven and bake for 45-55 minutes, or until the eggs are set in the center and the tater tots are golden brown and crispy. You can check doneness by inserting a knife into the center; it should come out clean.
  6. Rest and Serve: Remove the casserole from the oven and let it rest for about 5 minutes before serving to allow it to set and cool slightly for easier slicing.

Notes

  • You can substitute Colby Jack cheese with cheddar or a cheese blend of your choice.
  • For extra flavor, add chopped green onions or fresh herbs on top before serving.
  • Ensure the tater tots are frozen; do not thaw beforehand to maintain crispiness.
  • This casserole can be assembled the night before and baked in the morning for convenience.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
