Scale
- 4 large flour tortillas
- 1 lb ground beef or chicken (or substitute with ground turkey)
- 1 packet taco seasoning
- 1/4 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa
- 1/2 cup lettuce, shredded
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup black olives, sliced (optional)
Instructions
- Cook the Meat:
In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat, then stir in the taco seasoning and water. Simmer for 5 minutes until the seasoning is well absorbed. - Prepare the Tortillas:
Lay the flour tortillas on a flat surface. Spread a thin layer of sour cream on each tortilla. - Assemble the Roll-Ups:
Evenly spread a portion of the taco meat mixture on top of the sour cream. Sprinkle with shredded cheese, diced tomatoes, lettuce, green onions, and black olives if using. - Roll and Slice:
Carefully roll up each tortilla tightly, securing the filling inside. Once rolled, slice each tortilla into bite-sized pieces. - Serve:
Arrange the roll-ups on a serving platter and serve with a side of salsa for dipping.
Notes
- You can swap out the meat for refried beans for a vegetarian version.
- For added flavor, try adding guacamole or jalapeños inside the roll-ups.
- These can be made ahead of time and stored in the fridge for up to 24 hours before serving.
