Description

These Taco Tortilla Roll-Ups are packed with zesty flavors and are incredibly easy to make. Perfect for parties, game days, or a quick snack, these bite-sized treats are loaded with seasoned taco meat, cheese, and fresh veggies all wrapped in a soft tortilla. You can also customize them with your favorite toppings for added flair.

Ingredients

Units Scale
  • 4 large flour tortillas
  • 1 lb ground beef or chicken (or substitute with ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1/2 cup lettuce, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup black olives, sliced (optional)

Instructions

  1. Cook the Meat:
In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat, then stir in the taco seasoning and water. Simmer for 5 minutes until the seasoning is well absorbed.
  2. Prepare the Tortillas:
Lay the flour tortillas on a flat surface. Spread a thin layer of sour cream on each tortilla.
  3. Assemble the Roll-Ups:
Evenly spread a portion of the taco meat mixture on top of the sour cream. Sprinkle with shredded cheese, diced tomatoes, lettuce, green onions, and black olives if using.
  4. Roll and Slice:
Carefully roll up each tortilla tightly, securing the filling inside. Once rolled, slice each tortilla into bite-sized pieces.
  5. Serve:
Arrange the roll-ups on a serving platter and serve with a side of salsa for dipping.

Notes

  • You can swap out the meat for refried beans for a vegetarian version.
  • For added flavor, try adding guacamole or jalapeños inside the roll-ups.
  • These can be made ahead of time and stored in the fridge for up to 24 hours before serving.
