Description
This Taco Casserole is a delicious and easy-to-make dish that combines all the flavors of a classic taco in one comforting casserole. Layers of seasoned ground beef, beans, salsa, and cheese are baked between tortillas for a satisfying meal the whole family will love.
Ingredients
– 1 lb lean ground beef
– 1 red bell pepper, chopped
– 1/2 medium onion, finely chopped
– 3 teaspoons taco seasoning
– 1 teaspoon dried oregano
– 2 cloves garlic, minced
– 1/2 teaspoon salt (omit if using salted taco seasoning)
– 2 cups jarred tomato salsa
– 1 can black beans (590 ml or 19 oz), rinsed well
– 6 large tortillas
– 3 cups shredded cheddar cheese
Instructions
1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
2. In a large skillet, cook the ground beef, bell pepper, onion, taco seasoning, oregano, garlic, and salt over medium heat until the beef is browned and the vegetables are softened.
3. Stir in the salsa and black beans, and simmer for 5 minutes.
4. Place 2 tortillas in the bottom of the prepared baking dish, overlapping as needed. Top with half of the meat mixture and 1 cup of cheese. Repeat the layers.
5. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
6. Let the casserole rest for 5 minutes before slicing and serving.
Notes
– For a vegetarian version, omit the beef and double the beans.
– Add diced jalapenos or green chilies for extra heat.
