Description

Summer Shepherd’s Pie is a delicious twist on the classic comfort food, featuring a flavorful ground lamb or beef filling topped with creamy mashed potatoes. This hearty dish is perfect for a cozy family dinner or a summer potluck.


Ingredients

For the filling:

    • 1 lb ground lamb or beef
    • 2 cups carrots, diced
    • 1 cup frozen peas
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 tsp dried thyme
    • 1 tsp dried rosemary
    • 2 tbsp Worcestershire sauce
    • Salt and pepper to taste

For the mashed potato topping:

  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup milk or cream

Instructions

  1. Cook the filling: In a skillet, brown the ground lamb or beef. Add carrots, peas, onion, garlic, thyme, rosemary, Worcestershire sauce, salt, and pepper. Cook until vegetables are tender.
  2. Make the mashed potatoes: Boil potatoes until tender. Mash with butter, milk or cream, salt, and pepper.
  3. Assemble the pie: Spread the filling in a baking dish. Top with mashed potatoes. Bake until golden brown.

Notes

  • You can add grated cheese on top of the mashed potatoes before baking for extra flavor.
