Description

This homemade version of Subway’s famous Italian Herbs & Cheese Bread is soft, fluffy, and topped with a flavorful mix of herbs and melted cheese. Perfect for sandwiches, garlic bread, or just enjoying on its own!


Ingredients

For the Bread Dough:

  • 3 3/4 cups bread flour (or all-purpose flour)
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1 1/4 cups warm water (about 110°F)
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter, melted
  • 1 1/2 tsp salt
  • 1/4 cup nonfat dry milk powder
  • 1 tbsp olive oil

For the Herb & Cheese Topping:

  • 1/2 cup shredded Monterey Jack cheese (or a mix of Parmesan & mozzarella)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/4 tsp onion powder
  • 1 tbsp butter, melted (for brushing)

Instructions

  1. Activate the Yeast:
    1. In a small bowl, mix warm water and sugar. Sprinkle yeast over the top and let sit for 5–10 minutes until foamy.
  2. Make the Dough:

    1. In a large bowl (or stand mixer with a dough hook), combine flour, salt, and dry milk powder.
    2. Add the yeast mixture, melted butter, and olive oil. Mix until a dough forms.
  3. Knead the Dough:

    1. Knead for 8–10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for about 5 minutes.
  4. First Rise:

    1. Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place for 1 hour or until doubled in size.
  5. Shape the Loaves:

    1. Punch down the dough and divide it into 4 equal pieces.
    2. Roll each piece into a 6-8 inch log and place on a lined baking sheet.
  6. Second Rise:

    1. Cover loosely and let rise for another 30–45 minutes until puffy.
  7. Add the Herb & Cheese Topping:

    1. Preheat oven to 375°F (190°C).
    2. Brush the tops of the risen loaves with melted butter.
    3. Mix together garlic powder, oregano, basil, parsley, and onion powder, then sprinkle over the bread.
    4. Top generously with shredded cheese.
  8. Bake the Bread:

    1. Bake for 18–22 minutes, or until golden brown and cheese is melted.
    2. Let cool slightly before slicing.
