Units Scale

Main Ingredients:

  • 4 bone-in pork loin chops (11/2 inches thick and 8 ounces each)
  • 1 tablespoon canola oil
  • 1 tablespoon finely chopped onion
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon 2% milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon pepper
  • 1 cup chopped peeled apple
  • 1 cup whole kernel corn
  • 1 cup dry bread crumbs

Sauce:

  • 1/3 cup honey
  • 3 to 4 tablespoons Dijon mustard
  • 3/4 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed

Instructions

  1. Preheat the oven: to 375°F (190°C).
  2. Prepare the stuffing: In a skillet, sauté the onion in oil until tender. Remove from heat; stir in parsley, milk, salt, sage, pepper, apple, corn, and bread crumbs.
  3. Stuff the chops: Cut a pocket in each chop by making a horizontal cut along the edge. Fill with stuffing and secure with toothpicks.
  4. Prepare the sauce: Combine honey, mustard, and rosemary. Brush over chops.
  5. Bake: Place chops on a greased baking sheet. Bake for 25-30 minutes or until meat is no longer pink.

Notes

  • You can customize the filling by adding ingredients like nuts or dried cranberries.
  • Adjust the sweetness and tanginess of the sauce to suit your taste preferences.
