Ingredients
For the filling:
– 2 1/2 cups fresh bread crumbs from day old bread
– 1/4 cup combined grated Parmigiano/Pecorino cheeses
– 2 tablespoons freshly chopped parsley
– 1 clove garlic, finely minced
– 1 large egg
– 1/4 teaspoon salt
– Pepper to taste
For the tomato sauce:
– 2 tablespoons olive oil
– 1 clove garlic, minced
– Red pepper flakes (optional)
– 796 ml jar of tomato passata (tomato purée)
– Salt to taste
For serving:
– 450 grams pasta of your choice
Instructions
1. In a bowl, mix together the bread crumbs, cheeses, parsley, garlic, egg, salt, and pepper to make the filling.
2. Stuff the calamari with the filling mixture and secure the ends with toothpicks.
3. In a pan, heat olive oil and sauté garlic and red pepper flakes. Add tomato passata and salt, then simmer for 5 minutes.
4. Add stuffed calamari to the sauce, cover, and cook for 15-20 minutes until calamari is tender.
5. Serve over cooked pasta and enjoy!
Notes
– For a twist, try adding chopped olives or capers to the filling.
– To make this dish gluten-free, use gluten-free bread crumbs.
