Description

This Strawberry Pop-Tart Pie is a fun, nostalgic twist on the classic toaster pastry! With a buttery, flaky crust, a sweet strawberry filling, and a signature glaze with sprinkles, it’s like a giant homemade Pop-Tart. Perfect for sharing, this pie is easy to make and packed with childhood flavors.

Ingredients

Units Scale
  • Pie Crust: 2 rounds of homemade or store-bought pie dough
  • Strawberry Filling:
    • 2 cups fresh or frozen strawberries (chopped)
    • 1/2 cup granulated sugar
    • 1 tbsp cornstarch
    • 1 tbsp lemon juice
  • Egg Wash: 1 egg + 1 tbsp milk (for brushing)
  • Glaze:
    • 1 cup powdered sugar
    • 2 tbsp milk
    • 1/2 tsp vanilla extract
  • Toppings: Sprinkles

Instructions

1. Prepare the Pie Crust

  • Roll out one pie crust and fit it into a 9-inch pie dish.
  • Chill in the fridge for 15 minutes while preparing the filling.

2. Make the Strawberry Filling

  • In a saucepan, cook strawberries, sugar, cornstarch, and lemon juice over medium heat.
  • Stir until the mixture thickens (about 5 minutes). Let cool slightly.

3. Assemble the Pie

  • Pour the cooled strawberry filling into the chilled pie crust.
  • Roll out the second pie crust and place it on top. Seal the edges with a fork.

4. Bake

  • Brush the top with egg wash.
  • Bake at 375°F for 40-45 minutes, or until golden brown.

5. Glaze and Decorate

  • Mix powdered sugar, milk, and vanilla to make the glaze.
  • Drizzle over the cooled pie and top with sprinkles.

6. Serve & Enjoy!

  • Let the glaze set before slicing. Serve warm or at room temperature

Notes

  • Chill the dough before rolling for a flakier crust.
  • Make sure the filling is thickened to prevent a soggy pie.
  • The glaze is key! It gives the pie its signature Pop-Tart flavor.
  • For a shortcut: Use strawberry jam instead of homemade filling.
