Description

This Spinach Stuffed Chicken Breast recipe features tender chicken breasts filled with a creamy spinach and cheese mixture, creating a flavorful and satisfying meal.


Ingredients

– 4 boneless skinless chicken breasts, approximately 2 pounds

– 3 tablespoons olive oil, divided

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1/4 teaspoon smoked paprika

– 1/4 teaspoon garlic powder

– 1/4 teaspoon onion powder

– 1/2 cup yellow onion, small diced

– 2 teaspoons minced garlic

– 5 ounces fresh baby spinach

– 4 ounces cream cheese, room temperature

– 1 cup shredded mozzarella cheese

– 1/2 cup grated parmesan cheese


Instructions

1. Preheat oven to 375°F.

2. In a small bowl, mix together 2 tablespoons of olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder to create a seasoning blend.

3. Rub the seasoning blend over each chicken breast.

4. In a skillet, heat 1 tablespoon of olive oil and sauté the onion and garlic until softened.

5. Add the spinach and cook until wilted. Remove from heat and stir in cream cheese, mozzarella, and parmesan.

6. Slice a pocket into each chicken breast and stuff with the spinach mixture.

7. Place stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until chicken is cooked through.


Notes

– For a lower calorie option, you can use reduced-fat cream cheese and cheese.

– You can add cooked bacon or sun-dried tomatoes to the spinach mixture for added flavor.
