Units Scale

Main Ingredients:

  • 1 large salmon fillet (about 1 1/2 lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Spinach & Feta Filling: In a skillet, sauté garlic and spinach until wilted. Remove from heat and mix in feta, cream cheese, lemon zest, lemon juice, dill, salt, and pepper.
  2. Prepare the Salmon: Lay salmon flat, spread the filling evenly, roll the salmon into a log, and secure with toothpicks or kitchen twine.
  3. Cook the Pinwheels: Bake in a preheated oven until salmon is cooked through and filling is bubbly.
  4. Serve: Slice into pinwheels and serve hot.

Notes

  • Make sure to remove any bones from the salmon fillet before rolling.
  • You can customize the filling by adding ingredients like sun-dried tomatoes or pine nuts.
