Instructions

  1. Prepare the Chicken:
    Preheat the oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet to an even thickness (about ¼ inch).
  2. Season the Chicken:
    Sprinkle both sides of the chicken breasts with salt and black pepper.
  3. Make the Filling:
    In a medium bowl, mix the chopped spinach, feta cheese, minced garlic, and cream cheese until well combined.
  4. Roll the Chicken:
    Spread the spinach and feta mixture evenly onto each chicken breast. Roll up the chicken tightly and secure with toothpicks.
  5. Coat the Chicken Rolls:
    In a shallow dish, mix breadcrumbs, Parmesan cheese, oregano, and paprika. Dip each chicken roll in the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  6. Cook the Chicken Rolls:
    Heat olive oil in a large ovenproof skillet over medium heat. Sear the chicken rolls on all sides until golden brown (about 2–3 minutes per side). Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
  7. Serve:
    Remove toothpicks before serving. Garnish with additional Parmesan cheese or fresh parsley if desired. Serve hot with your favorite sides.
