  • 34 Tbsp plain Greek yogurt
  • 1 Tbsp lemon juice

To Assemble

  • 2 slices whole wheat bread, toasted
  • 1/4 avocado, mashed
  • 12 Tbsp pesto (approximately 1 Tbsp used for nutrition)
  • 12 slices tomato
  • Salt and pepper, to taste

Instructions

  1. Prepare Tuna Mousse: In a medium bowl, combine the drained tuna, finely diced red onion, drained capers, and chopped fresh dill. Mix in the Dijon mustard, plain Greek yogurt, and lemon juice. Stir well until all ingredients are incorporated and the mixture reaches a creamy, mousse-like consistency. Season with salt and pepper to taste.
  2. Toast Bread: Toast two slices of whole wheat bread until golden brown and crisp. This adds texture and prevents the bread from becoming soggy once assembled.
  3. Assemble Sandwich: Spread the mashed avocado evenly over one slice of the toasted bread. Then spread about 1 tablespoon of pesto over the other slice. Layer the tuna mousse on top of the avocado, followed by 1–2 slices of tomato. Sprinkle a little salt and pepper over the tomato to enhance flavor.
