- 1/4 cup grated cotija cheese (or Parmesan cheese as a substitute)
- 2 tablespoons vegetable oil (for frying)
- 1 tablespoon fresh lime juice (for garnish)

Instructions
- Prepare the batter: In a large bowl, mix together corn, flour, cornmeal, baking powder, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Add wet ingredients: In a separate bowl, whisk eggs, milk, cilantro, and cotija cheese. Fold this mixture into the corn mixture.
- Fry the corn bites: Heat oil in a skillet, drop spoonfuls of the batter into the oil, and fry until golden brown on both sides.
- Serve: Drain on paper towels, sprinkle with lime juice, chili powder, and cotija cheese. Serve hot and enjoy!
