Description

This Spicy Honey Lime Chicken recipe features tender chicken pieces marinated in a flavorful blend of soy sauce, honey, lime, garlic, and ginger, then grilled to perfection with a spicy Sriracha kick.   • 2 1/2 pounds boneless skinless thighs, trimmed and cut into 2 inch pieces
  • 2 tablespoons chopped cilantro or parsley

  • Honey Lime chicken marinade (and glaze):

    • 3 tablespoon soy sauce
    • 6 tablespoon honey or maple syrup
    • 1 teaspoon lime zest
    • 3 tablespoon fresh lime juice
    • 4 garlic cloves, minced or grated
    • 1 1/2 tablespoon grated fresh ginger
    • 1 tablespoon vegetable oil
    • 1 1/2 tablespoon Sriracha sauce
    • 1 1/4 teaspoon kosher salt
    • 1/2 teaspoon cornstarch (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine soy sauce, honey, lime zest, lime juice, garlic, ginger, vegetable oil, Sriracha, and salt. Add chicken pieces, cover, and refrigerate for at least 30 minutes.
  2. Grill the chicken: Preheat grill to medium-high heat. Thread marinated chicken onto skewers and grill for 10-12 minutes, turning occasionally, until cooked through.
  3. Make the glaze: In a small saucepan, mix cornstarch with a little water. Add the remaining marinade and bring to a boil, stirring constantly until thickened.
  4. Serve: Brush grilled chicken with glaze, garnish with cilantro or parsley, and serve with lime wedges.

  • You can substitute boneless chicken tenders or breasts for thighs.
