Honey Lime chicken marinade (and glaze):
- 3 tablespoon soy sauce
- 6 tablespoon honey or maple syrup
- 1 teaspoon lime zest
- 3 tablespoon fresh lime juice
- 4 garlic cloves, minced or grated
- 1 1/2 tablespoon grated fresh ginger
- 1 tablespoon vegetable oil
- 1 1/2 tablespoon Sriracha sauce
- 1 1/4 teaspoon kosher salt
- 1/2 teaspoon cornstarch (optional)
Instructions
- Marinate the chicken: In a bowl, combine soy sauce, honey, lime zest, lime juice, garlic, ginger, vegetable oil, Sriracha, and salt. Add chicken pieces, cover, and refrigerate for at least 30 minutes.
- Grill the chicken: Preheat grill to medium-high heat. Thread marinated chicken onto skewers and grill for 10-12 minutes, turning occasionally, until cooked through.
- Make the glaze: In a small saucepan, mix cornstarch with a little water. Add the remaining marinade and bring to a boil, stirring constantly until thickened.
- Serve: Brush grilled chicken with glaze, garnish with cilantro or parsley, and serve with lime wedges.
Notes
- You can substitute boneless chicken tenders or breasts for thighs.
- Adjust Sriracha sauce to your preferred level of spiciness.
