  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste

  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp coriander powder
  • Salt to taste
  • 1/2 cup water (or as needed)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Boil the Potatoes: Place the cubed potatoes in a pot and cover with water. Bring to a boil and cook until the potatoes are tender (about 10-12 minutes). Drain and set aside.
  2. Prepare the Masala: In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
  3. Sauté the Onion and Ginger-Garlic Paste: Add chopped onions to the pan and sauté until they turn golden brown. Add ginger-garlic paste and cook for another 1-2 minutes until fragrant.
  4. Cook the Tomato and Spices: Add chopped tomato, turmeric powder, red chili powder, garam masala, coriander powder, and salt. Stir well and cook for 3-4 minutes, until the tomatoes soften and the spices become aromatic.
  5. Combine the Potatoes and Masala: Add the boiled potatoes to the pan and toss them in the masala mix. Add water to help coat the potatoes evenly and cook for 5-7 minutes, allowing the flavors to meld together.
  6. Garnish and Serve: Once the potatoes are coated in the masala, garnish with fresh cilantro. Serve with a squeeze of lemon juice for an added tang.

Notes

  • You can adjust the spice level by adding more or less red chili powder or garam masala according to your preference.
  • For a richer flavor, you can add a tablespoon of yogurt or cream at the end of cooking.
