Scale
- 4 medium-sized potatoes, peeled and cubed
- 1 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 tsp ginger-garlic paste
- 1 tomato, finely chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp coriander powder
- Salt to taste
- 1/2 cup water (or as needed)
- Fresh cilantro, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Boil the Potatoes: Place the cubed potatoes in a pot and cover with water. Bring to a boil and cook until the potatoes are tender (about 10-12 minutes). Drain and set aside.
- Prepare the Masala: In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Sauté the Onion and Ginger-Garlic Paste: Add chopped onions to the pan and sauté until they turn golden brown. Add ginger-garlic paste and cook for another 1-2 minutes until fragrant.
- Cook the Tomato and Spices: Add chopped tomato, turmeric powder, red chili powder, garam masala, coriander powder, and salt. Stir well and cook for 3-4 minutes, until the tomatoes soften and the spices become aromatic.
- Combine the Potatoes and Masala: Add the boiled potatoes to the pan and toss them in the masala mix. Add water to help coat the potatoes evenly and cook for 5-7 minutes, allowing the flavors to meld together.
- Garnish and Serve: Once the potatoes are coated in the masala, garnish with fresh cilantro. Serve with a squeeze of lemon juice for an added tang.
Notes
- You can adjust the spice level by adding more or less red chili powder or garam masala according to your preference.
- For a richer flavor, you can add a tablespoon of yogurt or cream at the end of cooking.
- Masala Potatoes pair well with rice, roti, or naan and make a great side dish for curries or grilled meats.
