Description

Ingredients

– 5 pounds beef oxtails, trimmed

– 1 1/2 teaspoon kosher salt

– 1 teaspoon black pepper

– 1 tablespoon avocado oil or vegetable oil

– 1 medium onion, diced

– 1 green bell pepper, diced

– 1 red bell pepper, diced

– 2 celery stalks, chopped

– 4 garlic cloves, minced

– 1/4 cup all-purpose flour

– 4 cups beef broth

– 2 tablespoons Worcestershire sauce

– 2 teaspoon browning sauce (optional)

– 2 bay leaves

– 2 sprigs fresh thyme

– 1 tablespoon red wine vinegar (optional)


Instructions

1. Season oxtails with salt and pepper.

2. Heat oil in a large Dutch oven over medium-high heat.

3. Brown oxtails on all sides, then remove from the pot.

4. Add onions, bell peppers, celery, and garlic to the pot, sauté until softened.

5. Stir in flour and cook for 2 minutes.

6. Return oxtails to the pot, add beef broth, Worcestershire sauce, browning sauce, bay leaves, and thyme.

7. Bring to a simmer, cover, and cook on low heat for 3-4 hours until oxtails are tender.

8. Stir in red wine vinegar before serving, if desired.


Notes

– For added depth of flavor, sear the oxtails in batches before braising.

– You can also add carrots and potatoes for a heartier dish.
