Description

Ingredients

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.
  3. Add the egg, vanilla extract, and almond extract (if using), and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Divide the dough into two portions, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll out the dough on a lightly floured surface to ¼-inch thickness. Cut into desired shapes using cookie cutters.
  8. Place cookies on the prepared baking sheets, about 1 inch apart.
  9. Bake for 8-10 minutes or until the edges are set and just lightly golden.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before decorating.
