Description

A delightful twist on the classic snickerdoodle cookie, this Snickerdoodle Cobbler features a cinnamon-sugar topping over a soft and gooey cobbler base.

Base:

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon

Topping:

  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups hot water
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat: Preheat the oven to 350°F.
  2. Mix Base: In a bowl, mix together melted butter, milk, vanilla extract, sugar, flour, baking powder, salt, and cinnamon. Spread this mixture in a baking dish.
  3. Prepare Topping: In a separate bowl, mix brown sugar, hot water, sugar, and cinnamon. Pour this mixture over the base.
  4. Bake: Bake for about 45-50 minutes until the cobbler is set and the topping is caramelized.
  5. Serve: Serve warm with a scoop of vanilla ice cream, if desired.

Notes

  • This cobbler is best served warm, straight out of the oven.
  • Feel free to add nuts or raisins to the base for extra texture.
