- 1 small onion thinly sliced
- 2 cups shredded cheddar cheese divided
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1/2 tsp paprika
- 2 tbsp butter
- Fresh parsley chopped (optional, for garnish)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Season the pork chops: Season the pork chops with salt, black pepper, garlic powder, and onion powder.
- Sear the pork chops: In a large skillet, heat olive oil over medium-high heat. Sear the pork chops until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
- Prepare the scalloped potatoes: In a separate bowl, mix together sliced potatoes, onion, 1 cup of cheddar cheese, flour, milk, chicken broth, thyme, and paprika. Pour this mixture into a greased baking dish.
- Layer and bake: Arrange the seared pork chops on top of the potato mixture. Sprinkle with the remaining cheddar cheese. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the pork chops are cooked through and the potatoes are tender.
- Serve: Garnish with chopped parsley before serving.
