For the Smash Burgers:
  • 1 lb ground beef (80/20 blend for best flavor)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon butter or oil (for cooking)
  • 4 slices American or cheddar cheese
  • 4 brioche burger buns
  • 4 lettuce leaves (optional)
  • 4 slices tomato (optional)
  • 8 pickle slices
For the Baconnaise Sauce:
  • 1/2 cup mayonnaise
  • 4 slices bacon, cooked until crispy and finely chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon lemon juice

Instructions

Prepare the Baconnaise Sauce:

  1. In a bowl, mix the mayonnaise, crispy bacon bits, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and lemon juice. Stir until well combined. Refrigerate until ready to use.

Shape the Patties:

  1. Divide the ground beef into 4 equal portions (about ¼ lb each). Roll each portion into a loose ball.

Smash the Patties:

  1. Heat a cast-iron skillet or griddle over high heat. Add a bit of butter or oil.
  2. Place a beef ball onto the hot skillet and immediately press it down firmly with a spatula or burger press to flatten it.
  3. Sprinkle salt, pepper, and garlic powder over the patty. Let it cook for about 2 minutes without moving.

Flip and Melt the Cheese:

  1. Flip the patty and cook for another 1–2 minutes. Place a slice of cheese on top and allow it to melt. Remove from heat.

Toast the Buns:

  1. Lightly butter the burger buns and toast them on the skillet until golden brown.

Assemble the Burgers:

  1. Spread a generous amount of Baconnaise Sauce on both sides of the bun.
  2. Add lettuce, tomato, and pickles (if using).
  3. Place the burger patty with melted cheese on top.
  4. Cover with the top bun and serve immediately.
