Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1 tbsp rice vinegar
  • 4 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 12 oz lo mein, ramen, or rice noodles
  • 2 tbsp cornstarch + 3 tbsp water (for slurry)
  • Optional: 1 tsp sriracha for heat

Instructions

  1. Make the Sauce: In a bowl, whisk together honey, soy sauce, hoisin sauce, rice vinegar, garlic, ginger, sesame oil, and black pepper.

  2. Slow Cook the Chicken: Place chicken in the slow cooker and pour the sauce over it.

    • Cook on LOW for 6-7 hours or HIGH for 3-4 hours until tender.

  3. Shred the Chicken: Remove the cooked chicken and shred it using two forks.

  4. Thicken the Sauce: Stir in the cornstarch slurry and cook for another 10-15 minutes until thickened.

  5. Cook the Noodles: Boil noodles according to package instructions, then drain.

  6. Combine Everything: Toss the shredded chicken and thickened sauce with the cooked noodles.

  7. Serve & Garnish: Top with green onions, sesame seeds, and an optional drizzle of sriracha.

  • Use Chicken Thighs for Extra Juiciness – They stay more tender than chicken breasts.
