- 1 1/2 pounds beef stew meat, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 cup beef broth
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer to the slow cooker.
- Add baby potatoes to the slow cooker.
- In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
- Add beef broth to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
- Serve warm, garnished with fresh parsley if desired.
Notes
- For extra richness, add a splash of heavy cream to the slow cooker during the last 30 minutes of cooking.
- Swap baby potatoes for sweet potatoes or carrots for a sweeter flavor profile.
