For the Beef:
- 3 lbs beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 (12 oz) can beef broth
- 1 cup water
- 1 packet (1 oz) onion soup mix
- 2 cloves garlic, minced
For the Sandwiches:
- 6 hoagie rolls or French baguettes
- 6 slices provolone or Swiss cheese
- 1 tablespoon butter, melted
Instructions
Sear the Beef
- Season the chuck roast with salt, pepper, garlic powder, onion powder, and thyme. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned (about 3 minutes per side).
Slow Cook the Beef
- Transfer the seared roast to the slow cooker. Add Worcestershire sauce, beef broth, water, onion soup mix, and minced garlic. Cover and cook on low for 7–8 hours or high for 4–5 hours, until the beef is fall-apart tender.
Shred the Beef
- Remove the roast from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the juices.
Toast the Bread
- Preheat the oven to 375°F (190°C). Split the hoagie rolls and brush with melted butter. Place them on a baking sheet and toast for 5 minutes until lightly crispy.
Assemble the Sandwiches
- Pile the shredded beef onto the toasted rolls, top with provolone or Swiss cheese, and place back in the oven for 3–4 minutes until the cheese melts.
Serve with Au Jus
- Strain the juices from the slow cooker into a bowl and serve as a dipping sauce (au jus). Enjoy warm!
