This Slow Cooker Chicken Cacciatore recipe is a delicious and comforting meal that’s perfect for busy weeknights. Tender chicken cooked in a flavorful tomato sauce with vegetables, this dish is sure to become a family favorite.
Ingredients
– 1 tablespoon extra-virgin olive oil plus 2 teaspoons, divided
– 2 pounds boneless skinless chicken breasts or thighs
– 1 teaspoon kosher salt
– 1/2 teaspoon ground black pepper
– 1 medium yellow onion, chopped
– 3 cloves garlic, minced
– 1 tablespoon balsamic vinegar plus 1/2 teaspoon, divided
– 1 can crushed tomatoes (28 ounces)
– 1 medium green bell pepper, chopped
– 8 ounces sliced baby bella cremini mushrooms
– 2 teaspoons Italian seasoning
– FOR SERVING: Whole wheat pasta, brown rice, polenta, rice, zucchini noodles, or baked and shredded spaghetti squash
– Chopped fresh parsley
– Freshly grated Parmesan cheese
Instructions
1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then brown on both sides, about 3-4 minutes per side. Transfer chicken to slow cooker.
2. In the same skillet, add remaining olive oil, onion, and garlic. Cook until softened, about 3-4 minutes. Stir in balsamic vinegar and cook for another minute.
3. Add crushed tomatoes, bell pepper, mushrooms, and Italian seasoning to the skillet. Bring to a simmer and cook for 5 minutes.
4. Pour the sauce over the chicken in the slow cooker. Cover and cook on low for 6-8 hours or high for 3-4 hours.
5. Serve the chicken cacciatore over your choice of side dish and garnish with parsley and Parmesan cheese.
Notes
1. For a richer flavor, add a splash of red wine to the sauce.
2. To make this dish spicy, add red pepper flakes or a pinch of cayenne pepper.
