    • 4 boneless, skinless chicken breasts or thighs
    • 1 1/2 cups long-grain white rice
    • 3 cups chicken broth
    • 1 medium onion, finely chopped
    • 2 garlic cloves, minced
    • 1 cup frozen peas and carrots mix
    • 1/2 teaspoon paprika
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • Salt and pepper to taste

    • Fresh parsley, chopped

Instructions

  1. Prepare the Slow Cooker:

  3. Cook the Chicken and Rice:
    1. Cover the slow cooker and cook on low heat for 4-5 hours or high heat for 2-3 hours, until the chicken is fully cooked (internal temperature of 165°F/74°C) and the rice is tender.
  4. Add Vegetables:
    1. During the last 30 minutes of cooking, add the frozen peas and carrots. Stir gently to incorporate them into the rice mixture.
  5. Serve:
