- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup sliced carrots
- 1 tablespoon minced garlic
- 1 tablespoon Cajun seasoning

- 3 cups chicken broth
- 1 cup milk
- 1/2 cup whipping cream
- 1 cup shredded cheddar cheese

Instructions
- Sauté the Sausage: Heat olive oil in a skillet and cook the andouille sausage until browned.
- Add Ingredients to Slow Cooker: Place sausage, potatoes, bell pepper, onion, celery, carrots, garlic, Cajun seasoning, salt, pepper, and chicken broth in the slow cooker.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Finish Soup: Stir in milk, cream, and cheddar cheese until melted. Serve with green onions and Tabasco sauce.
