Ingredients
Cobbler batter:
▢1 cup flour
▢2 tablespoons sugar
▢1 teaspoon baking powder
▢1/4 teaspoon ground cinnamon
▢1/4 cup milk
▢1 egg
▢2 tablespoons canola oil
Berry mixture:
▢4 cups mixed berries of choice fresh or frozen (thawed and drained)
▢1 cup sugar
▢1/4 cup flour
Instructions
1. In a medium bowl, mix together the flour, sugar, baking powder, and ground cinnamon for the cobbler batter.
2. Add the milk, egg, and canola oil to the dry ingredients and stir until well combined.
3. In a separate bowl, toss the mixed berries with sugar and flour to create the berry mixture.
4. Spread the berry mixture evenly in the bottom of a slow cooker.
5. Spoon the cobbler batter over the berries.
6. Cover and cook on high for 2-3 hours or until the cobbler is set and the berries are bubbling.
7. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
– You can add a sprinkle of oats or chopped nuts on top of the cobbler batter before cooking for extra texture.
