Scale
- 1 pound ground beef
- 1 cup matchstick carrots
- 1 red bell pepper, sliced
- 2–3 scallions, chopped
- 3 garlic cloves, minced
- 1/2 cup low-sodium soy sauce
- 1/2 cup brown sugar
- 1 can (14.5 oz) chicken stock
- 2 packets of ramen noodles (discard the seasoning packets)
- Optional garnishes: sesame seeds, additional chopped scallions
Instructions
- Brown the Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Combine Ingredients: Transfer the cooked beef to a slow cooker. Add the matchstick carrots, sliced red bell pepper, chopped scallions, and minced garlic.
- Prepare the Sauce: In a bowl, mix together the low-sodium soy sauce, brown sugar, and chicken stock. Pour this mixture over the ingredients in the slow cooker.
- Cook: Cover and cook on low for 4-6 hours, allowing the flavors to meld.
- Add Noodles: About 30 minutes before serving, add the dry ramen noodles to the slow cooker, discarding the seasoning packets. Stir to ensure the noodles are submerged in the broth.
- Serve: Once the noodles are tender, serve the dish hot, garnished with sesame seeds and additional chopped scallions if desired.
Notes
- For added flavor, consider adding a splash of rice vinegar or a squirt of sriracha to the sauce.
- If you prefer a spicier kick, add a finely chopped jalapeño or a teaspoon of hot sauce to the mixture.
- This recipe is flexible; feel free to add other vegetables like mushrooms or bok choy for added nutrition.
