  • 6 large eggs
  • 56 tablespoons scallions/spring onion finely chopped
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons Dijon-style mustard or to taste
  • 1/3 teaspoon fine sea salt and black pepper to taste
  • 1/3 teaspoon red pepper flakes

Instructions

  1. Boil Eggs: Place eggs in a pot, cover with water, bring to a boil, then simmer for 10 minutes. Cool, peel, and chop.
