- 6 large eggs
- 5–6 tablespoons scallions/spring onion finely chopped
- 2 tablespoons mayonnaise
- 1 1/2 teaspoons Dijon-style mustard or to taste
- 1/3 teaspoon fine sea salt and black pepper to taste
- 1/3 teaspoon red pepper flakes
Instructions
- Boil Eggs: Place eggs in a pot, cover with water, bring to a boil, then simmer for 10 minutes. Cool, peel, and chop.
- Mix Ingredients: In a bowl, combine cottage cheese, chopped eggs, scallions, mayonnaise, mustard, salt, pepper, and red pepper flakes. Mix well.
